Red Huckleberry: Vaccinium Parvifolium
This has been the best year for red huckleberries! Find them on the edge of forests, on sunny hillsides and sometimes deep inside the forest. Very high in Vitamin C, they are tart but delicious. Add a little sweetener for a sensational jam or pie. You can freeze the berries for later as well.
Thimbleberry: Rubus Parviflorus
A wild raspberry with an incredible tart yet rich taste. Sun ripened berries taste like a wild raspberry jam. Difficult to pick enough to make preserves but they are one of the best tasting berries out there!
Evergreen Huckleberry: Vaccinium Ovatum
These huckleberries are coming in early this year. This berry has 2 variants, a blue berry and a black berry. The blue tastes more like a blueberry, while the black berry can be slightly sweeter. You will often find both kinds growing next to each other. They are both delicious and so good for you! Make jam, jelly, syrup, pies etc. Huckleberries freeze and dry very well. High in vitamins B and C, potassium and iron, huckleberries protect the body against immune deficiencies, cardiovascular diseases, prenatal health problems, and eye diseases. Huckleberries aid the pancreas in digesting sugars and starches. Wild huckleberries have nearly five times the antioxidants of cultivated blueberries.
