SPRING
Nettles: Urtica dioica
Nettles are not native, but they have established themselves here and are not considered invasive. They are extremely high in protein (for a plant food), good source of iron AND Vitamin C and taste delicious. Look for them in early spring and wear thick gloves while harvesting. I also use kitchen tongs to pick up the cut nettle tops. Make sure the area has not been sprayed with pesticides. You can pick lots of them in spring, blanch to remove sting and freeze. Great in soups, pesto. Substitute for spinach.
